A new era for a talented dessert stalwart.
The only thing we love more than dessert is… dessert in plural. Desserts. Multi-courses. We have had the opportunity, and certainly privilege, to have been able to sample a number of dessert-only experiences across the world. It’s hard to imagine though, that the last dessert bar in NYC that we encountered was Marble, just before the pandemic in 2020. That place has unfortunately, since closed. 😦 So when we heard that one of 2022’s most celebrated/hyped patisserie, Lysée, was offering a pop-up dessert degustation affair, we did not hesitate to book!
In late April, Lysée collaborated with a French chocolatier, Aurelien Rivoire, to bring a 5-course dessert degustation to NYC. The experience took place in the ground floor sitting area of Lysée, which has a very minimalist, blond wood aesthetic. It started with a palate cleanser beverage: the ombre-coloured “Yuja Sunrise” was a green sencha tea base enlivened with “yuja” (the Korean equivalent of the Japanese yuzu). The first dessert course — the “Nuage de lait” — saw strawberries flown in from Spain being swirled into a milky foam and ice cream concoction. The second course was the most exquisitely plated dessert that we have seen in a long time: anchored by a base composed of a circle of raspberries, a feuilletine biscuit, and an orb of black pepper mousse, raspberry sorbet was crafted into a beautiful rose to make the “Raspberry Vacherin.” As the third course, the “Butternut” was a heftier dessert, featuring small chunks of butternut squash, vanilla ice cream and panettone mousse. The epilogue consisted of an assortment of chocolate nibbles and flower-shaped shortbread cookies sandwiching a ganache infused with Korean sejak tea. The latter can be purchased in the patisserie itself, and is something that would make a wonderful gift.
When Lysée first opened last summer of 2022, our first impressions were disappointing. See here for our past review. By contrast, the recent dessert degustation collaboration was a well-executed, beautifully-crafted experience. We hope that Lysée will bring back the dessert degustation concept to NYC by offering similar dessert tasting experiences in the future!
